Vegan Alkaline Apple Pie Recipe

Ingredients

Crust: (1 large crust or 2 small)
2/3 cup coconut oil, cold
2 cups coconut flour
5 Tablespoons hot water

Filling:

7 apples (granny smith)
1/3 cup coconut sugar
2 Tablespoons tapioca flour
1 Tablespoon cinnamon powder
1 Tablespoon vanilla extract
1/8 teaspoon cloves powder
1/8 teaspoon nutmeg powder
1/8 teaspoon ginger powder

Directions

Crust:

Combine the coconut oil with the coconut flour and the hot water until smooth.

Make sure not to overwork the dough. Put dough in the fridge for 10 min before rolling it out.

Roll out the dough a little larger than the pie dish.

Place 1 pie crust in ungreased 9-inch pie dish. Before baking the crust, poke the bottom with a fork. Bake crust at 400°F for 15 minutes.

Now, time to work on the filling.

1. You will need a large bowl to combine to apples and spices.

2. Peel, core and cut the apples.

3. Add coconut sugar, tapioca flour, cinnamon, vanilla, cloves, nutmeg and ginger.

4. Mix all together then pour it into the pie dish.

(It is ok for the apples to be in a big pile, they will cook down.)

Get creative!

You can add a top crust; dough cuts out or weave design. (Add coconut oil on top to help the crust brown.)

Bake at 425°F for 40 minutes or until apples are tender and crust is golden brown.
